yummy baked salmon

I don't eat red meat, so we eat chicken alot.  We were both really sick of chicken, and I found this salmon marinade recipe online and tweaked it a little.  I made it tonight and it was DELICIOUS!  It was so flavorful and yummy. 
  • 2 salmon filets (about 1.5 lbs)
  • lemon pepper (to taste)
  • garlic powder (to taste)
  • salt (to taste)
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/3 cup water
  • 1/4 cup extra virgin olive oil
  • foil

Season salmon filets with lemon pepper, garlic powder and salt.  In a medium bowl, stir soy sauce, brown sugar, water and olive oil until sugar is dissolved.  Place filets in bowl with marinade and refrigerate for 1-2 hours (I only had time to marinate for 30 minutes and it was still delicious). When ready to bake, preheat oven to 425.  Make little foil packets for each filet and place on cookie sheet.  Pour remaining marinade into each packet and leave small opening for air to circulate. Bake for 12 minutes, then open packets and broil for 5 minutes.  YUM!
